Smoking

Our smoked meats have been developed over several years by Ced.

Salted at 5%, dried for a minimum of 24 hours and smoked using a mixture of Beech, Cocoa and Buckwheat for a smoother smoke and an amazing structure for meat and fish.



The Mature Meats

Making saturated meat is like aging a wine. If the basic product is already excellent it will only be sublimated, maturing from 3 to 8 weeks 25% weight loss.

Maturation is a natural process of aging the meat in order to mainly perfect its flavor and tenderness.
